Vegetarian cottage pie

 

Ingredients

1 kg potatoes

2 tablespoons Olive Oil

25 grams Unsalted Butter

1 Large Onion – coarsely chopped

2 Carrots – chopped into chunky slices

1 Tin Cannellini Beans, drained and rinsed

100 grams of dried soya mince ( I particularly like this one!) 

2 Bay Leaves (dried)

2 teaspoons Italian Mixed Herbs

2 teaspoons of vegetable extract (Marmite) dissolved in 500 mls boiling water

25 grams Fresh Brown Breadcrumbs

Method

Preheat your oven to 200 degrees centigrade.

Scrub potatoes and boil in their skins – approx. 20 mins – drain and allow to cool slightly.

Meanwhile add 1 tablespoon of olive oil to a large pan and gently fry the onions until soft, add the garlic and carrots and cook on a low heat for 7-10 mins.

Add the soya mince to the Marmite solution and allow to stand for around 5 mins before adding to the onion and carrots.

Finally stir in the beans, add the bay leaves, mixed herbs and season with black pepper.

Cover and simmer – 10 mins

Add remaining olive oil and the butter to the potatoes and mash until smooth. (You can add a little milk here too if you wish)

Pour the mixture into an oven-proof dish, spoon the mashed potatoes on top and sprinkle with the breadcrumbs.

Cook in the centre of the oven for 30-40 minutes – until the topping is brown and crispy.
