Mum-type memories


Sitting next to my husband in the car on the way home from work one Monday evening (when we haven’t managed to go shopping at the weekend) I was running over the contents of our fridge in my mind trying to decide if we had anything in to make a decent meal from.

I suddenly remembered something I used to make back when the kids were still at school (and I worked full-time) and decided I would re-visit this for our supper.

I mentioned this to my daughters who all said that this was “really random” and they didn’t remember eating it at all!

I assured them that they did and, even more importantly, it was one of only a few meals that ALL of us would eat without any modification!

So, what was this wondrous (easily forgotten) meal?

I called it “Eggs Mornay” but I cannot recall now if I had seen it in a recipe book or magazine or (probably more likely!) I had simply made it up because these ingredients were in the fridge.

Anyway, basically it is just hard-boiled eggs in cheese sauce topped with grilled tomatoes and crusty bits of toast.

To make sure my ever-starving bunch were full we used to have this with mashed potatoes and whatever vegetable was available (garden peas and sweetcorn were always popular)

The husband was pleased on this particular Monday evening as I knew we had eggs, milk and cheese in the fridge so we didn’t have to detour to the supermarket after a hard day’s work.

It was yummy and we have had it a couple of times since – not all meals have to be complicated after all!

    I remember having hard boiled eggs in cheese sauce with mash potato, I was only talking about it the other day. I don’t recall having tomatoes or other veggies with it though!

    Childhood memories are still the best though! Do you think they influence your adult decisions?

      Definitely! I’m always saying “this is what mum used to do” when I’m talking about eating habits and recipes. It’s important to give your kids a good variety of foods and the skills on how to cook healthily
