Quick Banana Pancakes by Alexandra Oliver

Banana pancakes

Ingredients

1 medium banana
2 large eggs
1 tablespoon of self raising flour
Optional – 1 to 2 teaspoons cinnamon

Method

In a bowl,mash the banana.
In a jug, whisk the eggs with the flour and once all combined, pour over the banana and whisk together all the ingredients. (Adding some cinnamon here works a treat, but is fine without)
Heat a ceramic frying pan or use a hot plate/griddle at a medium heat. Spoon in 2 tablespoons of mixture. The key to these pancakes is to keep them small, if you have room, cook a couple at a time. Once you see little bubbles appearing in the mixture, they are ready to flip! Use a spatula; these are quite thick and can’t be tossed like a crêpe.

I like to serve up with a dollop of Greek yogurt and any sliced fruit of your choice (Mmm strawberries), or if you are feeling naughty, syrup and caramelised banana slices tastes amazing too!
