Get-up-and-go breakfast wrap

A great start to the day with around 18 grams of protein and 13 grams of fibre!

Ingredients (Makes two wraps)

Small onion
60g cooked red beans
2 tbsps tomato puree
1 tsp chilli flakes
Small tin mushrooms
75 grams (frozen weight) spinach or a good handful of fresh
2 large eggs
2 Tortilla Wraps

Method

Chop an onion, throw into a pan and add red beans, chilli flakes, tomato puree, tinned mushrooms (drained & rinsed).

Cover and simmer for around 10 minutes.
Add spinach recover and cook for 5 minutes more (or until the spinach has throughly wilted).

Meanwhile griddle eggs until yolk is cooked (not too runny).

Take a tortilla wrap, spoon on your bean, mushroom and spinach mix, top with the egg.

Wrap and go!
